seasonal salads//tomato peach basil

as august draws to a close, the markets are overflowing with ripe tomatoes and peaches. there’s ethylene allover my kitchen. the tomatoes are literally splitting open. something had to be done…

ingredients:
one large yellow heirloom tomato
one half beefsteak (large, juicy, red)
one handful of fresh basil
one or two large peaches
salt and pepper to taste
2 tbsp olive oil
1 tsp honey

directions:
in a large bowl, combine diced tomatoes (about 3/4-1 in), finely chopped peach/es.
tear basil into the bowl, pour in olive oil and honey, mix well.

optional: crumble some goat, bleu, or feta on top and serve!
