last night i made my first successful red wine pasta sauce. it took a bit longer than i would have liked, but too good not to share!
try it for your next dinner party! i think the simplest way to make it veg is to sub the chicken with thickly sliced portobella (which i used instead of shitake mushrooms) and use a veg stock instead.
*if you can, steam some vegetables in above the sauce as it simmers down.
*a seafood and white wine version would also be very good….
