this one’s for the garlic heads out there! but really… if garlic doesn’t turn you on, this may not be the pesto for you.
1 cup chopped garlic scapes
1/3 cup roughly chopped almonds (you can use pine nuts or walnuts)
1/3 cup grated parmesan or romano cheese
1/3 cup olive oil
copious amounts of black pepper to taste
juice of 1/2 lemon and 1/2 inch of lemon zest
small handful (8 sprigs or so) basil, mint, parsley or other fresh herbs.
as you would prepare traditional pesto, combine ingredients and pulse in a blender, food processor, or with a handheld blender (this is my preferred option) until the mixture has turned into a paste. stir/scrape the sides of the container with a spatula on occasion. depending on the consistency, you may want to add more oil, do so by the tablespoonful.
